Not gonna lie, last week was really rough!
Between girl issues, getting sick, and not working out I felt my Dietbet goal slipping away :(
Thankfully, I am back on track this week and doing my best to hit my 4% goal and then some by the February 2nd deadline!

We enjoyed this 3-Cheese Penne recipe this weekend :)
skinny 3 cheese penne recipe serves 8 low fat low calorie low sodium and vegetarian

Doesn't it look super yummy?

Here is the dish I made last week that Mic and I were both begging for more! 


What you need:
8oz. whole grain penne pasta
2 14 oz. cans diced tomatoes with Italian seasoning
(I only used one can)
1 onion finely chopped
(I only used half an onion)
3 cups fresh spinach
4 oz. reduced fat feta cheese crumbles
1 tablespoon olive oil
5-6 garlic cloves, minced
Salt & Pepper to taste

Directions:
Bring a large pot of salted water to a boil. Add the penne noodles and cook according to package. Heat the olive oil in a skillet over medium heat. Add the onions and garlic and cook until tender. Add the spinach and cook until wilted. 
Add tomatoes and heat through.



Then add the drained pasta and 2 oz. of feta cheese. Salt and pepper to taste. 
Heat through and serve with remaining feta cheese on top.


This pasta dish was SO GOOD!
It will be added to our weekly dinner menu for sure!
Easy to make, tastes good, and it is healthy!
Another win in my book :)
I think next time I might use fresh tomatoes instead just to up the clean eating factor.

Do you have any awesome vacation plans for this year?
If not, where is your ideal spot?

Mic and I have been tossing around ideas for the last couple of weeks on where we would like to go this year. Last year was nice getting away for a week just the two of us (read about it here, here, and here), but we are looking forward to having X go with us this year. 
That being said, a family spot is the most ideal for us. And I need to get back to the beach!!!
I think we are looking to revisit Georgia this year as well as maybe a long weekend trip to the New England area. I hope it all works out and it is relaxing and enjoyable :)

What vacation plans do you have for this year?
Any fun weekend road trips?
Any suggestions for toddler friendly places to visit?

  1. Yummm! I love anything Mediterranean style! :) We try to not have carbs in the evenings, but I'm thinking maybe I'll make a big batch of this for our lunches all next week. I'm loving all the recipes you've been sharing!

    1. We have gone to MB for years, but it is always a struggle because both our families go there. Too much stress on us :( We might need to make a trip to Pittsburgh this summer for a weekend :)
