Good Eats | Low Carb Philly Cheese Steak

Welcome to my new series...



Every month I will be sharing a recipe that I have tried and love.
I decided to go with something a little healthier this time around since it is the beginning of the year.
Since most people are looking for healthy and easy recipes to make that they can enjoy while still following whatever their new workout/weight loss plan states I thought this one was perfect!




There are so many variations of this meal.
And this isn't just for low carb days.
You could easily serve this over some brown rice, potatoes, or serve as a sandwich.

I lightly followed this recipe to make it, but it so stinkin' easy you don't even need a recipe.

So here is what I used...

1 lb. of lean ground beef (I have used shaved beef before and it is really good too!)
1 green pepper, chopped
1 onion, chopped
1/2 a package of sliced mushrooms
1 bag of mozzarella cheese (I used what I had on hand)
2 tablespoons extra virgin olive oil
2 tablespoons Worcestershire sauce
salt and pepper to taste



In one pan I browned the meat,


while in another pan I sauteed the chopped onions, green peppers and mushrooms in a couple tablespoons of olive oil.
You don't have to chop your veggies this small if you like them ;)


Once each are cooked through, I mixed them together,


and added a few tablespoons of Worcestershire sauce.


Add a teaspoon or two of salt and pepper and you are ready to serve.
Some people melt the cheese down into a sauce and drizzle over top the mixture.
I'm not that fancy ;)
I just added the shredded cheese to the top and mixed it in with my fork.


This dish was super filling and yummy!

The Friday Faves | Week 2

Another week into 2019...How's it going for you?
Are you sticking with your goals or resolutions you have set for yourself?
So far so good here :)

I kicked off the weekend jumping on the #twinning train.
Anyone else love these types of things?



I can't complain about the results :)

Then I headed outside for a chilly, but much needed bout of fresh air!

After a good workout, I cleaned up and we headed out for a late lunch.
This time we headed to Newark to check out Barrel & Boar.
Mic tried out a Bloody Mary, while I waited for the main course ;)

Beef brisket, fresh cut fries, mac-n-cheese and garlic bread!
So good!
I ended up bringing more than half of it home for Mic to enjoy the next day.

He really enjoyed his Maple Pork and Sausage Grits as well.

I couldn't leave without trying the Creme Brulee'!
YUM!

I actually wanted to go to dinner at the location in Columbus for my birthday, but I wasn't sure everyone would like it.
I'm bummed that I didn't pick it for that night, but so glad we were able to try it out.
We will definitely go back!

The rest of the weekend we watched football and prepped for the upcoming week of school, work, basketball, etc.


X had another basketball game on Tuesday night, and I do love to watch him play but this week something just seemed off :/

Which should have been a clue that he wasn't feeling well....
He even tried to meditate the sick feelings away ;) but it didn't work.

A day later I had to keep him home from school for the very first time because he had some sort of stomach bug :(

But that meant I was able to work from home (trying to see the positive side of it).
In my down time I started reading my new book...


I am not really a book person, but so far I like it :)
I am sure I am the last person to read it.

Fashion, Food, Fitness & Friends Goals

Today I am linking up with The Blended Blog to talk about my goals for Fashion, Food, Fitness & Friends :)


Fashion
My closet basically contains two types of outfits...business casual for work, and then jeans/shorts and graphic tees for outside of work.
This year I am trying to work on finding some cute pieces for the in between.
I never have anything cute to wear if we go out with friends for dinner and such.
I bought 5 or 6 new tops just to go with me to Nashville!
I need to up my game in this area, but I don't want to break the bank.
So I am on the hunt for some cute pieces that still say Vanessa this year.


Food
I do pretty well eating healthy for my meals throughout the day/week, but I still can't stop mindless eating.
I sit at a desk all day at work and I always find myself reaching for something.
I know a lot of it has to do with the fact that I get bored staring at my computer all day.
I am busy, but I think I snack just to get through it.
I need to work on packing better snacks so when I grab for something it isn't that big bag of twizzlers I keep in my desk ;)


Fitness
Keep up the good work!
My goals are to workout at least 5 days a week for 30 minutes.
I have been doing at least 6 days a week so far, and I have even up'd a few of those days to an hour and a half!
I absolutely loving working out!
I just wish I had more time in the day to do it :/
Last year I did invest in myself a bit and bought a year long membership for the Beachbody workouts on demand.
I love it!
I can pull out my phone, pick any type of workout I want to do and get to it.
Plus, I can do it at home.
Meaning I don't have to find a babysitter for X and I can do the workouts when it is convenient for me.
Most the time that is between 8:30-10pm.


Friends
My motto this is year is the more the merrier!
Because I am a bit more of a tomboy, I tend to be a loner.
I am forcing myself to branch out a bit more this year and embrace hanging with the girls.
Honestly, it can be tough for me.
Remember, I am the girl who would rather watch a football game and drink beer with the guys, than go get my nails done and go shopping.
But it is a new year and I am working on changing my ways a bit to enjoy life more.
I am hosting a wine tasting party in February,
I am going to the JT concert in May with a few friends,
and I am going on a girls only trip to Myrtle Beach to celebrate a friend's 40th birthday this summer!

If you missed it, I recapped our fun weekend with some of our FAVORITE friends and family on Wednesday :)


On Monday morning I joined X and the rest of the AM Kindergartners for a field trip to Little Buckeye Museum and Richland Carrousel.
The museum is one of X's FAVORITE places to go!







He was beyond excited that his FAVORITE spot of the museum was open this time!
He absolutely loves getting to play in the McDonald's area!




He decided to take a turn ordering food....fries like his mom and a frappe' like his dad! lol!





 After a ride on the carrousel they hopped back on the bus and headed back to school.

I surprised X that day and let him skip his afternoon enrichment group to hangout at home with me :)
We even checked out some things for his upcoming birthday at our FAVORITE store!


Have you had these pretzels?
They are my FAVORITE because they are the perfect crunch mixed with the perfect amount of sweet dessert like flavor.
That last sentence makes sense in my head...

Over the weekend we got together with some friends for the OSU game and I needed something to bring with me.
Well, I just so happened to have a brand new bag of those delicious pretzels, so I whipped up a quick fruit dip to go with them.
SO GOOD!

Seriously, so simple!

Another FAVORITE this week is that I am still in 1st place in my fantasy league!!!!!


 I saw this and it instantly became one of my FAVORITE social media posts of the week :)

Christmas music is my FAVORITE!!!!!
Two Sirius radio stations started playing Christmas tunes on 11/1!!!!
Eeek!
That is all I have been listening to this week at work :)
Doesn't Christmas music just put a smile on your face?!?!

I am looking forward to a fun, yet low key weekend with friends :)
