What's Up September

Wednesday, September 26, 2018

I feel like I say this every month, but September went super fast!
I can't believe it is the end of the month already!
With that said, it is time for What's Up September :)
Linking up with Mel, Shay & Sheaffer

What we're eating this week...
Sunday - Lettuce Wraps
Monday - Garlic Chicken & Veggies
Tuesday - Chipotle at soccer ( X's request)
Wednesday - Pork loin & Veggies

What I'm reminiscing about...
That 19 years ago I was celebrating a friend's 21st birthday!
We blinked, and now we are all turning 40 this year!
#timepleaseslowdown

What I'm loving...
It's football season!
Give me all the High School, college and pro football!
Thursday - Mondays are great days in my house ;)

What we've been up to...
Soccer games

Ziplining and dinner with friends

Mommy/son date night

And I shared some things you may not know about me 😊

What I'm dreading...
Nothing at the moment :)

What I'm working on...
Getting things ready for X's 7th Birthday!
Yes, it isn't until December but if I don't start now things will be booked/get too busy/etc.
We have decided on a theme...Football!
I am thinking about picking up this flag football set for the boys to play at the party 🏈

What I'm excited about...
Hosting my annual Favorite Things Party.
It isn't until November, but my items have arrived and I can't wait to share them with my friends :)

What I'm watching/reading...
X and I watched Dancing with the Stars this week to see Bobby Bones (Country Radio) and Milo Manheim (Disney's Zombies),

I always enjoy The Voice (but I don't typically watch until they are down to the top 12 or so),

This Is Us is back this week,

and I want to see A Million Little Things as well.

Another one I am excited for is Murphy Brown!

I watched it as a kid and loved it, so I am curious how the show will be 20 years later :)

As far as reading goes I have listened to A Tribe Called Bliss on Audible and LOVED it!

I would gift it to everyone if I could!
I am going to buy the book now it was so good!

And I just started listening to Kind is the New Classy by Candace Cameron Bure :)

What I'm listening to...
Give me all the country music these days!
I actually just scored awesome seats to his concert in February!
I can't wait!

And I will be seeing Carrie in October 2019!

And throw some Imagine Dragons in there too!

What I'm wearing...

September came and I was all about camo, plaids, and darker colors in general!

Find all my camo pieces here

and last but certainly not least...Halloween!!!!

Fortnite costumes are huge this year!
Most of them were already sold out or possibly won't arrive by his school party :(
But the Crackshot Nutcracker was available, so we immediately ordered it and are waiting its arrival :)

What else is new...
The Browns WON!
After 635 days...they finally won a game!
And it was on Thursday Night Football for everyone to see!
Oh, and Baker Mayfield made his official debut and was a rockstar!!!
I can't wait for this weekend!!!

Bonus Question: What is your favorite way to eat or drink pumpkin?
This right here...
So, so good!

Dinner in a Pumpkin Recipe
Ingredients:
Either 1 medium size pumpkin, or 4 small individual pumpkins
1 ½ lbs. lean ground beef
1/3 cup chopped green pepper
¾ cup chopped celery
¾ cup chopped onion
1 teaspoon salt
¼ teaspoon pepper
¼ cup soy sauce
2 tablespoons brown sugar
1 – 4 ounce can of mushrooms
1 can of cream of chicken soup
2 cups cooked rice

If you want to make the faces on the pumpkins you will also need the following:
Black whole olives for the eyes
Steamed carrot (or several small carrots) used for the nose
Whole cloves for the mouth
Fresh parsley used to stick out from under the lid for hair
Toothpicks

Directions:
Using a sharp knife, cut the lid from the pumpkin(s) and scoop out the pumpkin seeds and excess membrane with a spoon or scraping tool.
In a large skillet, combine ground beef, chopped green pepper, chopped celery, and chopped onion and cook over medium heat until ground beef is browned.
Add the next 7 ingredients into the skillet and mix well. (salt, pepper, soy sauce, brown sugar, mushrooms, soup, rice)
Place the mixture into the pumpkin cavity, making sure pumpkins are sitting on a foil-lined casserole dish or baking sheet so they fit well without much room to move.
Place lid on the pumpkins and bake at 350 degrees for 1 ½ hours.
Just before serving, embellish the pumpkins by placing the black olives for eyes, carrot for nose, whole cloves for mouth, and parsley for hair. Hold the “face” in place with toothpicks.
To serve, place each individual pumpkin on a plate. If using one larger pumpkin, scoop out part of the baked pumpkin along with the mixture and serve on a plate.

Warning! The mixture and the pumpkins will be VERY hot! Eat and handle with caution!
